Colophon's Cookbook Series a Hit!
What began over a campfire in Oregon 25 years ago has
grown into an award-winning restaurant and now, three cookbooks.
Ray Dunn, co-owner of the Colophon Cafe in Fairhaven learned to
cook over campfires while camping and later, on sailboat stoves,
using whatever ingredients were available wherever he was.
In 1985, he and partner, Taimi D. Gorman, opened a restaurant
and began to serve some of those exotic soups, beginning with African
Peanut. The soups became so popular, the cafe grew from a few tables
and five employees, to a large restaurant on two levels and staff
that ranges from 45-70 people.
As customers requested copies of his recipes, he gladly
gave them out, and they ended up in many publications and local
kitchens. In 1995, the partners published the Colophon Cafe's "Best
Recipes", a collection of quiche, desserts, baked goods
and of course, soups. People wanted more. They releases "Best
Soups", featuring 48 soup recipes ranging from the exotic
to the incredible. And then, along came "Best
Vegetarian Recipes" to round out the collection of customer
favorites!
Chapters include, Chowders, Chilis, Cream Soups, Cold
Weather Soups, Vegetarian Soups and Exotic Soups. From Vegan Corn
Chowder to Cream of Broccoli, there is something for everyone. The
popular African Peanut, Mexican Corn & Bean and Split Pea, served
every day at the Colophon are here, as well as Cream of Dill Pickle,
Pumpkin Almond, Barbecue Ham and Curried Turkey Apple.
All recipes have been revised to serve 4-6 people and
may be served as a first course or entrees. Tips for garnishes and
foods to accompany the soups are with each recipe, and many also
contain philosophical quotes from famous people, and a few not so
philosophical quotes from the Colophon's own bovine, Mama Colophon.
Price of the cookbook is $9.95 and makes a great
